- 1/2 cup rolled oats
- 1 cup milk
- pinch of salt
- 1/3 cup egg whites
- 1 tsp vanilla
- 1 tbsp peanut butter, (optional for topping)
- 1 small banana
- 1 tsp salted butter
- 1/2 tbsp maple syrup
- 1/4 tsp cinnamon

- In a small saucepan, combine the almond milk, rolled oats, and a pinch of sea salt. Stir well and bring to a boil. Reduce the heat to a gentle simmer and cook for about 5 minutes, stirring occasionally, until the oats are tender and most of the liquid has been absorbed.
- While the oatmeal cooks, make the caramelized bananas. In a small skillet over medium-low heat, melt the butter with the maple syrup. Once the mixture begins to bubble, add the banana slices in a single layer and sprinkle with cinnamon.
- Cook the bananas for a few minutes, then carefully flip them and cook for another few minutes until they're soft and caramelized with a golden-brown color.
- Once the oatmeal is cooked, reduce the heat to low. Slowly pour in the egg whites while stirring constantly to prevent them from scrambling. Continue stirring until the egg whites are fully incorporated and the oatmeal becomes thick and creamy.
- Stir in the vanilla and an extra sprinkle of cinnamon.
- Transfer the oatmeal to a bowl and top with the caramelized bananas. Add a spoonful of peanut butter, if desired, and serve warm.
