  • 1/3 cup brown or coconut sugar
  • 2 tablespoons maple syrup
  • 3 eggs
  • 1/2 cup greek yogurt
  • 1/3 cup butter (melted)
  • 3/4 cup brewed coffee or hot water
  • 1 teaspoon vanilla extract
  • 3/4 cup oat flour
  • 2/3 cup chocolate protein powder
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter (softened/room temperature)
  • 1/4 cup cocoa powder
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla
  • 2-4 tablespoons milk

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Line an 8x8 inch baking pan with parchment paper and set aside.
  3. In a mixing bowl, whisk together all wet ingredients aside from the coffee/hot water until smooth.
  4. Add in the dry ingredients, making sure to spoon and level the flour, protein powder and cocoa. Do not pack them into your measuring cups!
  5. Whisk just until the dry ingredients start to blend into the batter, then pour in your brewed coffee or hot water.
  6. Whisk until smooth. The batter will be on the thicker side.
  7. Transfer to your prepared pan and bake for 22-28 minutes or until a toothpick comes out clean. The top may crack slightly as it bakes, this is normal.
  8. Remove from the oven and let cool in the pan for about 15 minutes, then transfer to a wire rack to finish cooling.
  9. While it cools, make the frosting. Beat the butter with an electric mixer for about 2 minutes, then mix in the cocoa powder.
  10. Add in the powdered sugar, then the vanilla and milk until you get your desired consistency.
  11. Once the cake is completely cooled, add the frosting, slice and enjoy!
