Ingredients
- 1 cup coconut sugar
- 1/2 cup unsalted butter (or dairy free butter)
- 1/4 cup melted coconut oil
- 1 egg
- 2 tsp vanilla bean paste (or vanilla extract)
- 1 chai bag
- 1 3/4 cup gluten free flour such as Bob's Red Mill or King Arthurs
- 1/2 cup almond flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tbsp tapioca flour (may sub arrowroot powder or cornstarch)
- 1.5 cups powdered sugar
- 2-3 tbsp heavy cream or plant cream
- 1/4 tsp nutmeg
- 1 tsp vanilla bean paste

- Preheat oven to 350F and prepare a baking sheet by lining it with parchment paper.
- In an electric mixer, beat the coconut sugar, melted coconut oil and butter until smooth and creamy.
- Then, add in the egg, vanilla bean paste and the chai mixture. Just cut open the chai bag and add in the contents to the mixture.
- Next, add in the gluten free flour, almond flour, baking powder, salt and tapioca flour. Mix until all the ingredients are well incorporated.
- Use a single cookie scoop and add dough to a baking sheet that is lined with parchment paper.
- Use your fingers to flatten out the cookies, these will only spread slightly during bake time.
- After cookies are baked and cooled, mix together all the ingredients for the frosting and spread evenly.
- Top with a star anise or cinnamon and enjoy!
