  • 2 ¾ cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter (room temperature)
  • 1 ¼ cup granulated sugar
  • 1 egg (room temperature)
  • 1 egg yolk (room temperature)
  • 3 tsp vanilla extract
  • ½ cup granulated sugar (for rolling the cookie dough)

  1. Preheat the oven to 350F. Line baking sheet pans with silicone baking mats or parchment paper.
  2. In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. In the bowl of a stand mixer fitted with a paddle attachment or in a large mixing bowl with an electric hand mixer, cream the unsalted butter and granulated sugar until creamy. Add the egg, egg yolk and vanilla extract and mix until well combined. Pour in the flour mixture and mix on low speed until the cookie dough forms.
  4. Portion the cookie dough using a large cookie scoop (3 tablespoons). Roll the sugar cookie dough balls in granulated sugar. Bake the cookies for approximately 11 to 12 minutes until the edges are set and the centers are slightly underbaked.
  5. Remove the baking pans from the oven and allow the cookies to cool on the pan for 2 minutes before transferring to a wire rack to cool completely.
