Tacos, Burgers, Sandwiches and Wraps

A taco recipe is rarely one recipe. It is a protein, a sauce, a pickle and a bread, and the recipe card usually flattens all four into a single list.

Which is why these are the recipes most worth saving properly, and the ones most often half-remembered.

What makes handhelds different to organise

  • They are component recipes. The sauce usually travels to other dishes, so it is worth noting separately from the thing it went on.
  • Assembly order decides whether the bread survives. That detail is almost never in the method.
  • They scale by headcount rather than by servings, which is a different arithmetic from a tray bake.
  • Most of the work is prep, so these reward reading the whole recipe before starting more than most.

How to build it

  1. Note the sauce separately. You will want it on something else.
  2. Record the assembly order that stopped it going soggy.
  3. Scale by how many people rather than by the stated servings.
  4. Tag the ones where everything can be prepped ahead and assembled at the table.

Frequently asked questions

How do I scale a taco or burger recipe for a crowd?

Scale the protein by headcount rather than by the published servings, and prep the components separately so people assemble their own. That is also what stops the bread going soft.

Why does my sandwich go soggy?

Usually assembly order. A barrier layer between the bread and anything wet buys you time, and it is the step most recipes leave out.
