Ingredients
- 1 cup plain greek yogurt
- 1/4 cup almond butter
- 1 tsp vanilla bean paste (or vanilla extract)
- 2 tbsp maple syrup
- 1/2 green apple (peeled and finely chopped)
- 1/3 cup coconut caramel (divided)
- 1 cup chocolate chips (melted with coconut oil)

- In a bowl, mix together the yogurt, almond butter, maple syrup, and vanilla.
- Add in peeled and finely chopped green apples, mix until well incorporated.
- Use a cookie scoop or a spoon and add dollops of the yogurt to a baking sheet that is lined with parchment paper, spread even in a circle.
- Add on a dollop of caramel to the center of each yogurt bite and freeze until full firm, about 4 hours.
- When ready, in a medium bowl melt the chocolate, I like to add in a touch of coconut oil which helps the chocolate melt and have a creamy and smooth texture. Place it in the microwave in 30 second increments giving it a good stir between each round.
- Working quickly, dip each frozen yogurt bite in the melted chocolate and coat fully. Place back on the parchment paper and back into the freezer for about 30 minutes more.
- Once totally frozen again, store in the fridge and enjoy!
