Ingredients
- 3 over-ripe bananas
- 1/2 cup almond milk
- 1/3 cup maple syrup
- 1 tsp vanilla
- 2 chia eggs *see notes
- 2 tsp cinnamon
- 1/4 tsp salt
- 1/2 Tbsp baking powder
- 3 cups of oat flour
- 1/2 cup dark chocolate chips

- Preheat your oven to 350F, prepare a loaf pan by lining it with parchment paper or spraying it with non-stick spray. I like to do both.
- Then, make the chia eggs by combining 2 tbsp of chia seeds with 5 tbsp of water. Mix well and set aside to thicken.
- In a large bowl, mash bananas then add in almond milk, maple syrup, vanilla and chia eggs. Whisk until well combined.
- In a separate bowl, combine oat flour, baking powder, salt and cinnamon. Then, add dry ingredients to wet and mix with a spatula until well incorporated.
- Option to add in chocolate chips to the batter. I like to add mine on top, but it’s a personal preference!
- Pour batter into prepared loaf pan, sprinkle with chocolate chips.
- Bake for 45-50 minutes for until a toothpick inserted in the center comes out clean.
- Store in the fridge up to 4 days.
