What makes chocolate different to organise
- Percentage matters more than brand. A 70% and a 55% behave differently in the same recipe, and many recipes just say "dark".
- Melting and tempering are different skills with different failure modes. Note which the recipe actually needed.
- Cocoa powder is not interchangeable either. Dutch-processed and natural react differently with the raising agent.
- These range from five-minute to genuinely difficult, so the time tag does real work in this collection.
How to build it
- Write down the chocolate you used, percentage included.
- Note whether it was tempered or just melted, and how it set.
- Check whether the recipe assumes Dutch-processed cocoa before substituting.

Does the brand of chocolate matter?
Less than the cocoa percentage, which changes sweetness and how it sets. A recipe that just says "dark chocolate" is leaving the most important variable to you, so record what you used.
Can I swap cocoa powders?
Not freely. Dutch-processed is alkalised and natural is acidic, and they react differently with baking soda or powder. Check which the recipe assumes before substituting.
