Ingredients

  • 2 cups all purpose flour
  • 1 ½ tsp ground ginger
  • 1 tsp baking soda
  • ½ tsp salt
  • ¼ tsp ground nutmeg
  • ¼ tsp allspice
  • 1 cup vegetable oil
  • 1 cup brown sugar
  • 1 egg
  • 1 Tbsp vanilla extract
  • 1 cup pumpkin puree
  • 1 ½ cups chocolate chips (or one full package of 300g)

  1. Preheat the oven to 350°F. Grease a 9x13 baking dish with vegetable oil and a paper towel.
  2. In a large bowl, mix together the all purpose flour, baking soda, salt, cinnamon, ground ginger, nutmeg, and allspice.
  3. In a separate bowl beat together the brown sugar, vegetable oil, egg, and vanilla extract with a hand mixer.
  4. Add in the pumpkin puree and mix again with electric mixer.
  5. Add the dry ingredients to wet ingredients and mix (with electric mixer).
  6. Fold in the chocoalte chips with a wood spoon or spatula.
  7. Pour the batter into the greased baking dish. Smooth into an even layer with a spatula.
  8. Bake for 30-35 minutes, or until a toothpick comes out clean when poked through the center. Let cool for 20 minutes before slicing and serving.
