  • 1 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1 1/2 tbsp vanilla
  • 1/4 cup coconut flour
  • 1/2 cup almond flour
  • Pinch of sea salt
  • 1 1/4 cup Lily's sugar free dark chocolate chips, ( divided )
  • 2 tbsp coconut oil

  1. Line an 8x8 baking pan with wax paper and set aside.
  2. In a large bowl, mix together the peanut butter, maple syrup, vanilla, coconut flour, almond flour, a pinch of sea salt, and 1/4 cup of the Lilly's dark chocolate chips.
  3. Flatten the cookie dough down into a single layer and add to the freezer for about 10 min while you melt the chocolate.
  4. For the chocolate glaze mix the remaining chocolate chips and 2 tbsp coconut oil in a bowl and microwave for 20 seconds then stir. Repeat until the chocolate is fully melted.
  5. Pull the dough out of the freezer and put the chocolate glaze on top and a sprinkle of sea salt. Freeze for a few hours until everything is solid. (Mine took about 3-4 hours)
  6. Remove from the baking pan and cut into 12 equal chunks.
