- 1 packet (2 1/4 teaspoons) instant yeast
- 1 tablespoon (21g) honey
- 1 1/2 cups (360g) warm water
- 1 tablespoon (14g) avocado oil
- 1 teaspoon kosher salt
- 4 1/4 cups (510g) all-purpose flour, spooned and leveled
- 6 cups (1440g) water
- 1/4 cup baking soda
- 1/2 cup (126g) pizza sauce
- 24 1/2-inch cubes (about 7 ounces) mozzarella cheese
- 24 slices of pepperoni, cut into quarters
- 1 (50g) large egg
- 1 tablespoon (15g) water
- 1/4 cup (56g) unsalted butter, melted
- 2 tablespoons fresh parsely, finely chopped
- 2 cloves garlic, grated or minced
- 2 tablespoons parmesan cheese
- Flaky salt

- Make the Dough: In the bowl of a stand mixer fitted with the dough hook attachment, combine the yeast, honey, warm water, avocado oil, salt, and all-purpose flour. Mix on low speed until a shaggy dough begins to form. Increase the speed to medium-low and knead for 7–8 minutes, until the dough is smooth and elastic. The dough should feel soft and slightly tacky, but not sticky. If it’s sticking heavily to the sides or your hands, add flour 1 tablespoon at a time until it becomes manageable.
- Let the Dough Rise: Transfer the dough to a lightly greased bowl, turning it to coat all sides. Cover with plastic wrap or a clean towel and place in a warm spot to rise for about 1 hour, or until doubled in size.
- Prep the Filling: Toward the end of the rise time, cut the mozzarella into small cubes and quarter the pepperoni slices so everything is ready for assembly.
- Prepare for Baking: Preheat the oven to 400°F and line two baking sheets with parchment paper. In a medium pot, bring the water and baking soda to a boil over medium-high heat.
- Shape the Dough Ball: Once the dough has risen, divide it into 24 equal pieces (about 35g each). To shape, place your hand over each piece of dough and move it in a circular motion against the counter to form a smooth ball.
- Fill the Pretzel Bites: Working one at a time, gently flatten each dough ball into a 3-inch circle. In the center, add: 1 teaspoon pizza sauce, 1 cube of mozzarella, about 4 pieces of quartered pepperoni. Carefully bring the edges of the dough up and over the filling, pinching tightly to seal. Make sure there are no openings so the filling doesn’t leak out. Place seam-side down on the prepared baking sheet and repeat with the remaining dough.
- Baking Soda Bath: Using a slotted spoon, gently lower 4–6 dough balls at a time into the boiling baking soda water. Boil for no more than 30 seconds, then remove and place back onto the parchment-lined baking sheet.
- Egg Wash: In a small bowl, whisk together the egg and water until smooth. Brush the tops of each pretzel bite with the egg wash.
- Bake: Bake for 13–15 minutes, or until the pretzel bites are golden brown.
- Make the Garlic Butter: While the pretzel bites are baking, prepare the garlic butter. In a small bowl, combine the melted butter, garlic, parsley, and grated parmesan cheese.
- Finish & Serve: Remove the pretzel bites from the oven and let them cool for about 2 minutes. While still warm, brush or toss them in the garlic butter until evenly coated. Sprinkle with flaky salt and serve immediately.
