
Vegan Berry Crisp

Ingredients
- 2 cups frozen mixed berries
- 2 tbsp raspberry jam (can use any other flavor)
- 1/4 cup coconut sugar (can sub cane, brown or monk fruit sweetener)
- 1 cup oat flour
- 2/3 cup old fashioned oats
- 2 tbsp ground flax
- 1/4 cup extra virgin olive oil (can sub coconut oil)
- 1/4 cup maple syrup

- Preheat oven to 350F.
- Add the frozen berries directly into your baking dish. You can use a pie dish like I did here, or an 8x8 , or 9x9.
- Next, add in the jam and coconut sugar and mix well until each berry is well coated and set aside.
- In a medium mixing bowl, add in the oat flour, oats, ground flax, extra virgin olive oil and maple syrup. Mix well until a thick crumble is formed.
- Using your hands, grab the mixture and crumble between your fingers and sprinkle over the berries until they are well coated, until there are little to no berries showing.
- Bake for 30 minutes or until golden brown.
- Let sit on the counter for 10 minutes before serving. Enjoy warm with vanilla ice cream or coconut whip cream.
