What makes these different to organise
- Overmixing is the single most common failure and it is a technique note, not an ingredient one. Worth recording once you get it right.
- They freeze unbaked as well as baked, which turns one session into several breakfasts. The recipe rarely tells you which works better.
- Scones want cold butter and a light hand. The ones that come out tough almost always came out of a warm kitchen.
