Ingredients
- 1 pie dough (homemade or store-bought)
- 3/4 cup unsalted butter (melted)
- 3/4 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1/2 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 tsp salt
- 2 tsp vanilla extract
- 2 large eggs
- 3/4 cup chocolate chips ( or chopped chocolate, or a mix!)

- Preheat the oven to 400°F.
- Roll out your pie crust and fit it into a pie pan. Crimp or trim the edges as desired.
- Prick the bottom of the crust with a fork, then line it with parchment paper and fill with pie weights or dried beans.
- Bake for about 10-12 minutes until the edges start turning golden.
- Remove the weights and parchment, then bake for another 5-7 minutes until the bottom is slightly golden. Allow it to cool.
- Lower the oven temperature to 350°F.
- In a mixing bowl, whisk the melted butter, granulated sugar, and brown sugar until combined. Mix in the eggs and vanilla extract until a thick batter forms.
- Gently fold in the flour, cocoa powder, and salt, then mix in the chocolate chips or chopped chocolate. (or both!)
- Pour the brownie filling into the parbaked crust, smoothing the top.
- Bake for 40-45 minutes or until the top is set but the center still looks slightly soft. A toothpick should come out with moist crumbs when inserted in the center.
- Let the pie cool to room temperature, allowing it to set further.
- Slice and serve as is, or with a scoop of vanilla ice cream for extra indulgence!
