What makes these different to organise
- Pan size is part of the recipe. An 8x8 and a 9x13 are not the same bake, so save the pan you used alongside the time.
- Underbaking is usually the point, which makes "done" harder to judge than in most baking. Note what the centre looked like when it worked.
- They cut badly warm and well cold, so the waiting is a real step even when the recipe does not list it.
- Almost all of these travel well, which makes them the default when you need to bring something.

- Record the pan you actually used. It matters more than the oven.

Does pan size really change a brownie recipe?
Yes, more than almost any other variable. The same batter in a smaller pan is deeper and needs longer, and in a larger pan is thinner and needs less. Save the pan you used with the time that worked.
How do I know when brownies are done?
Most brownie recipes want you to pull them before a skewer comes out clean. Note what the centre looked like on the batch you liked, since that is a more reliable cue than minutes.
