What makes these different to organise
- The crust and the filling are separable. Note which pairing you actually used, because it is rarely the one printed together.
- Blind baking is the step that decides a soggy base, and whether a recipe needs it depends on the filling, not the crust.
- Fruit is seasonal and variable. The same recipe with under-ripe fruit needs more sugar and less thickener, so note the adjustment.
- These take longer than they look because of chilling and cooling. The real total is rarely the published one.
