What makes slow cooking different to organise
- Low and high are not interchangeable. Halving the time on high is a rule of thumb that fails on anything with dairy or a thickener, which splits or scorches.
- Liquid does not reduce the way it does on a hob. A recipe adapted from a stovetop braise will usually be too wet unless you cut the liquid.
- The machine is the variable nobody records. Note which cooker you used and how long it actually took, because that number transfers to every other recipe here.
- These are make-ahead by nature, so what matters afterwards is how it reheated and froze, not just how it tasted on the night.
How to build it
- Write down your cooker and the real time it took. That single note makes every other slow cooker recipe you save more accurate.
- Note whether you cut the liquid, and by how much, for anything adapted from a stovetop version.
- Record how it reheated. A slow cooker batch is usually eaten twice, and the second time is the one you plan around.
- Keep the drinks and dips tagged. They use the same machine for a completely different occasion.

Can I convert a slow cooker recipe from low to high?
Roughly, at about half the time, but not for anything with dairy, cheese or a starch thickener. Those split or catch on high. Note what worked on your machine rather than trusting the conversion.
Why is my slow cooker meal watery?
Because almost nothing evaporates under the lid. Recipes adapted from stovetop braises usually carry too much liquid, so cut it and record the amount you settled on.
Do slow cooker times differ between machines?
